At Last.... Homemade Tapioca Pudding

Pin It I finally made tapioca pudding! I have been buying Kozy Shacks for Andrew for over a year now, and I always thought I could make my own pudding at home, which would have a much shorter list of ingredients... Well, it turns out it is a pretty simple dessert to make.

My tapioca pudding had to be "very thick, not watery or runny at all" (special request...) So I stir it in the pot for a bit longer then you normally would. The pudding also thickens as it cools. To store it, I place a plastic film directly on the surface to avoid a "skin".

I got the recipe from Bob's Red Mill's website. I chose this recipe which was easier and I had a feeling it would make a thicker pudding.

Tapioca Pudding Recipe:

1/3 cup tapioca pearls
1 cup Water
1/2 cup Sugar
4 cups Milk (1 or 2 %)
2 Eggs
2 tsp Vanilla

In a 4 quart saucepan soak the tapioca pearls in the water for 60 minutes. Whisk in milk, sugar and eggs. Let stand 30-60 minutes. Let mixture come to a full rolling boil and stir often as is cooks with a wire whisk. Remove from stove and let set 60 minutes and do not stir. Place a plastic film on top and refrigerate it until ready to serve. It makes a lot of pudding...

I got a thumbs up from the "tapioca pudding expert" in the house.... No more store bought tapioca!!

This looks great. I'm going to try this recipe. But does anybody have any idea how long to cook the mix afterj it comes to a boil? Judging from other recipes, I'm guessing about 10-15 minutes, but I'm not certain.

@ anonymous - you are right, it doesn't take much time on the stove, you will notice it will get a little thicker, but the consistency will come together after it's chilled. If you are in doubt, you can always try a few pearls of tapioca from the pot, they should be firmed but cooked, you will noticed if they are raw. Hope it helps!

I have been buying tapico pudding from the store but before I know it its gone. I just can't keep enough on hand. I'm going to try your receipe, my only hope is that it goes watery. Even my instant pudding goes water.Any ideas why?

@ Anonymous - If you want your tapioca pudding to get thick and less runny, make sure you cook, stirring often until you see the consistency you like. Don't stop before that. On the other hand, if you ant a watery pudding, just cook it for less time, and if it gets too think you can always add a little more milk. Hope it helps!

I made mine using just the yolks, 3 days latter still not watery. (I also 'heap' my measure of tapioca)

If you're allergic to Dairy substitute with Almond, Rice, Soy, or Coconut Milk. Same amount as regular milk, and same way of making it. Also if you don't want the sugar substitute for Stevia sugar - half the amount than regular sugar.

Did that for mine, and it turned out the same. I've tried others and it didn't work out as well as this particular recipe. Thank you.

If this tastes like the original Kozy Shack Tapioca pudding I will be so thrilled! I don't understand why Kozy Shack changed their recipe several years ago and destroyed the best tapioca pudding I've ever tasted. At first I thought I must have gotten a bad batch but then it wasn't long before we realized they'd changed it. I won't even buy it anymore because not only did they put in 1/2 the tapioca that they used to do, they made the pudding thinner, but it also has sort of an off taste to it. I just don't get why they did this other than to save money but I bet they lost a lot of customers in doing this. I would have paid more but now I won't buy it and if my husband forgets and brings it home, he has to eat it or it gets tossed. I've tried several tapioca recipes but I never get the right consistency, or the same exact taste.

I found that I'm allergic to the annatto that you use as food coloring. I didn't realize that it was a tree nut. My lips were completely swollen. Please adjust your labeling to mention the tree nut reference.
